We have lactose intolerance which means our intestines are lacking enough lactase enzymes to digest the sugar (lactose) in milk products. Some of us find we can tolerate varying degrees of lactose, such as hard cheese, yogurt, some regular milk, or lactaid milk, while others feel we can tolerate none. Many cultures are naturally lactose intolerant. By using fortified soy, nut, rice, oat or hemp milk, or other lactose-free products, we can have our ice cream and eat it, too!
