Spinach is a great source of iron! I like the ready to use baby spinach for spanikopita (greek spinach pie). The leaves are more tender and sweet. You don't have to deal with the stems of 'adult' spinach which can be time consuming when preparing the mixture. I also find the baby spinach require no chopping before or after cooking b/c the leaves are so shrunk and tiny. I once mixed baby and regular spinach b/c I had one bag of each and had to use it up, and found the textures are too different. I also prefer baby spinach in my salads.
