Marie's Chunky Blue Cheese Dressing

This is a great blue cheese dressing. It is a little thicker than most dressings so little goes a long way. It is not in the isle with all the other salad dressings. Instead you can usually find it near the lettuce in the product section. You can also use it as a vegi or buffalo wing dip.

Hood Small Curd, 4% Milkfat Cottage Cheese

For some reason, this tastes different than other brands to me. I don't think it is as bitter as others so I always look for Hood.

El Jimador Tequila Reposado

Wouldn't have ever bought this, but they had it everywhere in Cancun and it is tasty (if you like Tequila). Give it a "shot" sometime instead of the old faithful Jose Cuervo.

  I am on a ten year point plan. I am supposed to be between 20 and 25. I come in around 18 points on most days. And before anyone flames me....yes I eat plenty. A lot of free veggies and low point items like Boca Burgers, lean luncheon meats, baked chips, high fiber fat free bread and plenty of chicken recipes. That and I stay away from convenience foods.

  it really depends on the person. theres an actual formula to calculate what you should personally be eating (its all addition, dont worry). then it depends on what your goal is. right now, i'm working to maintain (5 months strong!), which means eating more points that i was when I was trying to lose (around 25-26 for me). but I figured that calculation out through expirence -what matches my gym habits and keeps my weight stable, etc.

  I'm on core, so I don't count points. I just have to make sure my diet is mostly lean meats, fruits, veggies, and grains though. If I have anything outside of that category, I have to count. I love morning toast, which is 2.5 points for two slices, so I coun that and make sure to consider that value when going to the gym.

  I have 24 daily points. I try to eat more core plan foods since it lets me eat more. I like to cook, so I use the recipe builder on the WW website - it makes things really easy. I do try to stay away from pre-packaged and convenience foods.

  The amount of points you are allowed depends on your height and weight. The best thing about weight watchers is unlike other diets I have been on, I am not starving all the time. I highly recommend it. My friend helped me come up with a daily meal plan and I have already lost 4lbs in 2 weeks (and I have definately cheated on occasion!)

Does anyone know how to cook Tofu?

  I like to cook with extra-firm tofu when I make stir-fry. The secret is to press out as much of the water as you can: cut the block of tofu into a few thick slabs, lay it on some clean kitchen towels (or paper towels), cover with more towels, then put a cutting board on top and add a weight (I use a heavy cookbook). Let it sit like this for at least 15 minutes, changing the towels if they get soaked through. Then you cook the tofu! I cut mine into cubes and pan-fry in a little canola oil over high heat until the outside turns crisp and golden brown. Then you can add it to any marinade -- it soaks up flavor like a sponge in just a few minutes. Cooking it before adding sauce makes it hold together better.

  You can also boil it. I add it to many of my soups and stews. Just be sure to add it towards the end of cooking. Too long in the pot or too much stirring will break up your tofu cubes.

  Great advice from Laura on this.. I've always tried to fry tofu lightly, but it never seems to work. I think getting the water out of it, and getting the oil at the right temperature (hotter than I usually think) is crucial. Good idea too to not keep the fried tofu simmering in sauce for too long!

  Carey............I just made a great chili using tofu crumbles. I saute them with onions, peppers, and mushrooms...then added the chili beans (drained) pinto beans, black beans and red kidney beans, canned peeled tomatoes and a ton of chili seasonings. It was great and the tofu tasted like ground beef in the chili.
  I served it with sour cream, guacamole, and a salad. It made a ton of chili. I had 8 for dinner.
  
  I also use the firm tofu cut up in chunks and stir fry it with seasonings, garlic and onions . I find that it takes on the flavor of the seasonings I cook it with.

  One way I like making tofu is by cutting them into cubes (the soft kinds) and then lighlty season with some soy sauce and sesame oil. I then place the bowl/plate in the microwave and zap for 1 minute (or until hot). Then garnish with scallions and minced ginger.

  Oh and a quick tip-- instead of buying tofu crumbles, you can make it yourself. A friend of mine told me this trick. Just freeze a block of tofu and use it whenever you want. The freezing process changes the texture so when you cook it in chilis, the texture is like ground meat.

  Try boiled firm tofu cubes in miso soup. Add green onions or daicon (sp? Chinese white radish) for some texure. Childhood favourite!!!

  Definitely add to stir fries. And make sure you press out the water. I also add it to package miso soup, so basically, boiled in broth. I've also made a recipe of open faced stuffed peppers also involving brown rice, mozzarella, and tomato.
