Mix some of this into your pancake batter and you will be in heaven.
When I make baked mac & cheese, I put a few handfuls of these in a zip lock back, seal it, then crush them into crumbs. Then I sprinke them liberally on top of the mac & cheese before it goes into the oven. Sounds weird, I know, but it tastes really good and creates just the right texture. My extended family gives the thumbs up.
Good gf mix for making chocolate chip cookies! When I follow the directions, mine turn out crispy-edged and flat, but chewy...just the way I like 'em! Just be sure to line your cookie trays with parchment paper. Those suckers will stick if you don't, which will force you to create lots of crumbs (good icecream topping, no?) if you try to pry them off with a spatula. I speak from experience. Easy with parchment paper, though. Quick to make!
Does anyone live in the Harrisburg-Hershey area? I grew up there and am going back for a visit this week. I was diagnosed with Celiac affter I moved away, so I don't know the best spots to go for gluten-free friendly eats. Any suggestions?
