Blue Diamond makes my favorite almond milk; however, I like the unsweetened kind, since this one is a bit sickly sweet for me to drink straight. It does make a great mixer though, as I discovered when I recently bought a carton by accident. Try it with some bourbon, yum.
Good for when I want a quick (read: lazy), healthy meal. Like a lot of Amy's dishes, it does better with some hot sauce (they tend to be pretty tame with the seasonings), but the veggies, black eyes peas and rice all have good flavor and texture.
Gluten-free pasta AND fake cheese? I admit I was skeptical when trying this one, but Amy's rarely steers me wrong, so I gave it a shot. I was pleasantly surprised, in that it's pretty tasty. Hard to compete with some of their real cheese-smothered options, but it's a lot healthier and still pretty yummy, so it wins points in my book.
I would like the description of this community a lot more if it said something about including both Type 1 and Type 2 diabetics or else changes the phrase "naturally low levels of insulin" to... something else. Type 1s produce NO insulin whatsoever (as opposed to T2s who produce at least some) because our immune system killed our islet cells. Might seem like nitpicking, but most of the T1s I know get frustrated when we are left out of descriptions or lumped in with T2s.
