Greek yogurt is creamy due to straining. Plain, natural yogurt which is normally thin, is allowed to set in a filter. The watery whey permeates the filter leaving the yogurt solids behind. You can fill a large coffee filter with yogurt and place the filled filter upright in a container. Place in the fridge, and you'll have "Greek-style" yogurt in a few hours.
Please remember that since most of the water has been drained from the yogurt solids, the fat will be more concentrated giving it a better creamy body. That is why is seems so high in fat.
Mache is a salad green commonly used by the French. It has a very mild nutty flavor to it. It blends well with other greens such as radicchio and frissee. Mache wilts less in a salad than spring mix (baby lettuces). It's great all by itself with a little dressing as a side salad. It is a little more expensive, but it is a great alternative to bland lettuces.
Honestly, industrial pancake mix is ridiculous. There isn't much to pancake mix in the first place. Go to your cupboard, pull out the flour, baking powder, sugar, and salt and mix it proportionally in a glass jar or plastic container. Abbra cadabra! You have pancake mix for a fraction of the cost. You can personalize your mix by adding: cinnamon, buckwheat flour, finely chopped pecans, or whatever you like. You still have to add the liquids regardless of whether you make your own mix or buy a processed mix.
