Anyone have any in low carb hacks?
For example, I made mashed turnips the other night and I liked them MORE than mashed potatoes. They had a nice zing to them, but the same mouth feel as MP.
Looking for similar substitutes to lower carb content, increase fiber content.

In Boston, there is this great little cafe that serves some raw/vegan selections including Beet chips with vegetable dip. This would be a great thing for you to do in lieu of carb-loaded chips. I love the sweet beet taste and the crunch. I'm sure beats would go with a variety of flavors, too.

Mashed cauliflower is also a great substitute - it doesn't taste like you'd imagine. I used the fat free Half & Half and it came out nice and creamy.

I make mashed cauliflower but have found a trick to make the cauliflower a similar consistency to mashed potatoes is to put fresh cauliflower broken into pieces in a covered glass dish with a couple tablespoons of water. I microwave it about 8 minutes and then check to see if it is soft. When the cauliflower is soft I take a slotted spoon and dip the steamed cauliflower into a food processor. I add about 2 oz cream cheese, salt and pepper and whir it up smooth. I then transfer the mashed cauliflower to a bowl and top with cracked pepper and a pat of butter. If you put the cauliflower in water it will be way to wet and soupy, plus the addition of wet ingredients such as cream will just make it wetter. You can add bacon, chives or cheese to jazz it up.
